Kitchen Express, express

Tonight’s dinner was tilapia fillets a la Spencer and
Brussels sprouts parboiled, then pan fried in bacon fat with
shallots, apples, pecans, and balsamic vinegar. Delicious, but the
tilapia fillets were a little small, so we were looking for
dessert. I remembered that Kitchen Express has an orange fool, and
I thought I would use some of our mandarins. I looked more closely
at the recipe and saw it called for orange juice, though–and
juicing our mandarins seemed dubious. The recipe also calls for
reducing the juice by half. So why not orange juice concentrate?
Two thirds of a can, slightly diluted and folded into whipped cream
does the trick. With the bonus that the rest is fully diluted in
the fridge, waiting for tomorrow’s breakfast.
